Gather all of your ingredients.
If the nut butter is not already easily stir-able , gently warm it to soften.
Combine the nut butter with all of the remaining ingredients, and stir to form a cookie dough texture.
Break into four pieces, and roll each piece into a ball. Then press into cookie shapes with your hands or the bottom of a spoon.
You can also press some chocolate chips into the unbaked cookies at this time.
Eat the no bake cookies as-is, or proceed to the next step for baking instructions.
Place on a cookie sheet, lined with parchment paper if desired, and bake for eight minutes on the oven center rack at 350 degrees Fahrenheit .
Let cool before handling, because they firm up as they cool. Store leftover cookies in an airtight covered container on the counter, in the refrigerator, or in the freezer.
Make Easy Protein Bars
Who said these have to be cookies? This recipe also makes great protein bars.
After you make your dough, instead of dividing it up and spooning it onto a cookie sheet, spread the dough out in a single layer of a 9×13 baking pan greased with butter or coconut oil.. After the dough bakes completely , cut it up into bars and store them in an airtight container.
This protein cookie recipe is versatile. Mix things up and make it your own.
All you need are a few simple ingredients and a mixing bowl to create your new favorite protein cookies.
Are Protein Cookies Healthy
The market is saturated with packaged protein cookies these days. Brands such as Lenny & Larrys, Munk Pack, NuGo, Atkins, BHU Fit, and Quest come in an array of flavors like chocolate, lemon, oatmeal raisin, and birthday cake.
While the store bought cookies are packed with protein, that does not necessarily mean all of the options are good for you. Some cookies contain more added sugar than protein, and others include artificial sweeteners, palm oil, or white flour.
Making your own healthy protein cookies at home allows you to control what ingredients to include and lets you skip the processed ingredients or hard-to-digest gums or sugar alcohols.
The homemade protein cookie recipe has no flour, more than three grams of fiber, and up to twenty grams of protein for just 200 calories in a large cookie.

Add The Protein Powder Flour And Leavening Agent Before Folding The Chocolate Chunks Into The Dough
For even distribution of the dry ingredients, the recipe calls for mixing them together in a separate bowl first. But Ill let you in on a little secret for actually reading these notes. Ive tested these chocolate chip protein cookies with everything thrown straight in the food processor, and they turned out fine!
If youre using a food processor, 3-4 pulses should do it. Youre not after a completed dough herejust enough to incorporate most of the dry ingredients.
Add the chocolate chunks into the crumbly dough, use a spatula to fold everything together, and youre ready to form your cookies!
Notice how the spatula takes the cookie dough from crumbly to smooth cookie dough with just a few passes.
Main Flour: Oat Flour
I love using oat flour in cookies it helps to give it the most authentic flavor when paired with protein powder. Plus, it pleases anyone who may be gluten-free! If you dont have oat flour, you can very easily make your own by throwing some oats into a food processor or spice grinder.
Can you swap out oat flour in these protein cookies? Not really. I tried a version with regular all-purpose flour, but the cookie ended up being cakey. If you want a soft cookie, oat flour is the way to go.

How To Make Chocolate Chips Protein Cookies:
Prep – Preheat oven to 350F/175C. Line a baking sheet with parchment paper.
Step 1 – In a large bowl, mix together peanut butter, coconut sugar, protein powder and eggs .
Step 2 & 3 – Add chocolate chips and mix until just combined. The dough shouldnt look crumbly. If it is, add 1 to 1.5 teaspoons coconut oil.
Step 4 & 5 – Spoon about 2 tablespoons of dough into your hand to make a ball.
Step 6 – Press it with the palm of your hand to flatten it and form into a thick cookie . Place on the prepared baking sheet and repeat with remaining dough. You should get 13-14 cookies.
Note: The cookies will only spread a bit while baking so shape them nicely before placing in the oven. If you want, press a few chocolate chips on top of the cookies for that perfect choc chip cookie look.
Step 7 – Bake for 12 minutes, remove from the oven. They will look undercooked, its normal. Now, let them cool for 15 minutes to give them time to set! Don’t be tempted to touch them before! They might fall apart if you pick them up while still warm and that would be pretty sad, right!?

To make keto protein cookies, use a keto protein powder and low carb nut butter such as macadamia butter. Sweeten the cookies with granulated erythritol or stevia.

Other Flours: Coconut Flour & Almond Flour
In my original attempt at this protein cookie, I utilized only coconut flour . The cookie came out great, but coconut flour tends to have an overpowering taste. If you have a nut allergy and cant use almond flour, leave that out of the recipe and double up on the coconut flour as I did.
The cookie will come out great, but youll be able to taste the coconut flour. When you use only a small amount like the recipe calls for, you cannot taste it at all .
I use coconut flour because it is super absorbent and helps hold the structure of the cookie while still being low in calories. If you cant do coconut flour for any reason you can likely just replace it with more almond flour. The final result will be a little bit different, but it shouldnt be detrimental.
What Kind Of Protein Powder Should You Use
Good News Any kind works in this recipe! Whey, casein, plant-based they will all work.
**My personal favorite protein powder is an organic, very clean, plant-based one called MVP Sport by Purium. You can use the code: LUCIANOHEALTH for 25% off. I use the chocolate flavor in this recipe, but vanilla works too.
Flavors chocolate, vanilla, peanut butter, or plain will be your best options for this recipe. I would stay away from anything fruity flavored, as it may give this savory cookie an odd sour taste.
I just really love these cookies and I think you will too! Lots of trial and error to really perfect the protein cookie. Ive had my fair share of dry protein cookies, where I was nearly choking on it. This one is by far the most tasty and moist protein cookie Ive ever baked! ENJOY!

Cream The Butter Vanilla And Both Sugar Substitutes Together
This process is essentially the same as my protein sugar cookies, with the only difference being the addition of Swerve brown. Similar to the sugar cookies, I used vanilla bean paste for these chocolate chip cookies, but extract will work fine.
Theres nothing fancy about creaming in this step. You just want a light and fluffy mixture with no lumps of brown sugar remaining.

How To Make Protein Chocolate Chip Cookies
Preheat the oven to 350F. Line a baking sheet with parchment paper, and if you like, you can brush with a bit of oil too, just be sure nothing sticks.
Place the protein powder, oat flour, and baking powder in a bowl and stir to combine.
In a separate bowl, add the butter, vanilla bean paste, and honey. Using an electric mixer, like this one, or you can use a food processor, whisk the ingredients together until you have a light and fluffy batter.
Pour the dry ingredients into the bowl and mix well with a spoon to combine. The mix should become thicker and drier, ready to be made into cookies.
Next, add your dark chocolate chips and sea salt to the dough and fold them in with a spoon to evenly mix through.
Using a cookie scoop, make 9 cookies and place them evenly spread on the baking tray you have prepared. You can use a spoon if you like and make cookie shapes that are even and round.
Now its time to bake them in the oven for 10-12 minutes until cookies are golden brown but slightly soft in the center.
Finally, remove from the tray and let them cool down on a wire rack before serving.
What Do These Chocolate Protein Cookies Taste Like
These cookies are not exactly like decadent sugar-filled thick and chewy chocolate chip cookies. But they’re rich and buttery-tasting, with almost no added sugar, and packed with protein.
The texture is crisp and chewy at the same time. For a chewier cookie, try baking them for 8 minutes instead of 10 minutes. And keep them in a sealed plastic container at room temperature.
I’ve been curious about Lenny & Larry’s protein cookies , but their original formulation is made with wheat flour. They also have quite a bit of sugar, so I wouldn’t likely have been tempted to eat them anyway.
I’ve just noticed that Lenny & Larry’s now sells a keto variety made with almond flour, and erythritol . I guess I kind of unintentionally backed into a Lenny & Larry-style keto recipe? ?

What Makes Cookies Chewy Or Crispy
Sometimes you might have a preference for a chewy cookie or a crisp cookie, so what makes them turn them out in different ways?
Many things can alter a cookies texture the oven temperature, ingredient types, ingredients quantities, and added baking sodas and powders.
If you have very high sugar content in a recipe, you will get a crispier result. Meanwhile, the sweetener softens in the oven and usually spreads on the tray it then crystalizes and hardens on cooling.
So, think about those cookies that come out looking soft but then go hard on the rack!
However, the type of sugar can matter too! The granulated type will give a crisper result than syrup or brown sugar.
The type of fat can make a difference too. If you have used solid butter, when cool, those cookies will tighten up again to form something little firmer than those using other types of fat that have provided more moisture from higher milk and water content.
A soft cookie texture usually has been created by the release of the carbon dioxide produced by raising agents, like baking soda. Thats where air bubbles are created in your bake, giving you a delicious sponge-like texture.
How about cooking your cookie for a lower temperature over a longer time? His will produce a crunchier texture.
And of course, cooking for less time at a higher temperature will results in a softer cookie with perhaps a little crispness about the edges.
So, depending on your preference, theres so much fun to be had with cookies!

Which Protein Powder Is Best For Baking
Not every protein powder is created the same. Some are thicker than others, some are finer than others and some have different additives in them. As a general rule of thumb, all protein powders can work, but they will leave different textures. Here are the more mainstream protein powders and what texture and flavor profiles they have.
- Brown Rice Protein Powder Earthy in flavor and texture, this vegan protein powder keeps the cookies soft and chewy. Be sure to use a vanilla flavored one, otherwise, the cookies will be very bland.
- Casein Protein Powder My favorite protein powder for baking. This blend of powder never dries out baked goods, and has the most delicious flavor.
- Whey Protein Powder My least favorite protein powder to use, whey is the most natural protein powder, and also the lowest in carbs. However, they are most prone to dry out baked goods, so be sure to keep an eye on it.
How To Make The Protein Cookie Recipe
Protein Powder: Vanilla flavoured & sweetened works best! If you only have unflavoured, add 1 tsp vanilla extract and 1-2 tsp sweetener of choice
Peanut butter: This can be replaced any nut or seed butter of choice.
Granulated sweetener of choice: I used monk fruit, but any granulated sweetener or sugar will work
Milk or water: Use any milk of choice or water
Chocolate chips: Optional but highly recommended!
