  • Preheat oven to 350 degrees, line two cookie sheets with parchment paper. Set aside.
  • In a large mixing bowl whisk together all dry ingredients.
  • Add in wet ingredients. Mix with wooden spoon until combined. If needed, get in there with your hands and mix completely. If batter is too dry, add a tablespoon at a time to be able to form the batter into a ball. Toss in chips and nuts if using and combine well into batter.
  • Place in fridge for 10 minutes.
  • Roll into golf ball size balls. Gently press down with the back of a measuring cup.

    Step 7 – Bake for 12 minutes, remove from the oven. They will look undercooked, its normal. Now, let them cool for 15 minutes to give them time to set! Don’t be tempted to touch them before! They might fall apart if you pick them up while still warm and that would be pretty sad, right!?

    I use coconut flour because it is super absorbent and helps hold the structure of the cookie while still being low in calories. If you cant do coconut flour for any reason you can likely just replace it with more almond flour. The final result will be a little bit different, but it shouldnt be detrimental.

    Preheat the oven to 350F. Line a baking sheet with parchment paper, and if you like, you can brush with a bit of oil too, just be sure nothing sticks.

    Place the protein powder, oat flour, and baking powder in a bowl and stir to combine.

    In a separate bowl, add the butter, vanilla bean paste, and honey. Using an electric mixer, like this one, or you can use a food processor, whisk the ingredients together until you have a light and fluffy batter.

    Pour the dry ingredients into the bowl and mix well with a spoon to combine. The mix should become thicker and drier, ready to be made into cookies.

    Next, add your dark chocolate chips and sea salt to the dough and fold them in with a spoon to evenly mix through.

    Using a cookie scoop, make 9 cookies and place them evenly spread on the baking tray you have prepared. You can use a spoon if you like and make cookie shapes that are even and round.

  • Add 1 cup of oats to a food processor.This is the small food processor I have and it works great. It doesnt take up too much space in my cabinet and is usually still big enough to get whatever I need done.
