Can I Replace The Coconut Flour
If you dont follow a grain free or keto diet, you can use another flour instead of coconut flour. Here is what can be substituted instead:
- Almond flour: You can use almond flour or almond meal as another low carb and grain free flour. However, you will need to double the amount of coconut flour required.
- Oat flour: Oat flour can also be used instead of coconut flour, and you will need to double the amount.

Easy Peanut Butter Protein Bars
These Easy Peanut Butter Protein Bars are no-bake and contain only four simple ingredients. A great snack to boost your energy and serve a source of protein!
Almost exactly one year ago, my sister-in-law introduced me to these peanut butter protein bars. I was immediately intrigued when she told me how fast they were to make and that they were a healthy snack option to keep you filled and energized in between meals. They actually taste good and are not chalky!
You use only 4 ingredients and they come together within 5 minutes, although there is a 1 hour chilling time before you can actually eat them. The chilling time is only to firm up the bars quickly. Otherwise, they store on the counter at room temperature. I just keep them in the pan, cut into bars, ready to uncover and grab a quick snack when the craving strikes.
The original recipe instructs to use a 9×9-inch square pan, however, I typically use my 7×11-inch as I do not own a 9×9-inch. I’ve included both dimensions in my version below. Either way, you cut into 12 bars for 12 servings.
I hope you love these as much as we do!

Top Tips For Homemade Protein Bars
Use a good food processor this has to be our #1 tip. A high-speed food processor is so important for not only pulverizing your dates but combining all of your ingredients into a smooth consistency.
Consistency is key all said and done, youre looking to get a cookie dough-like consistency out of your batter. This is why this recipe calls for drippy peanut butter and honey. They will help your ingredients stick!
- too dry: add more water
- too wet: add more oat flour
Any size pan works dont have a 9×13-inch pan? No worries! Since these are no-bake protein bars, you can use any size pan. Use a square pan or even 2 loaf pans. You can cut your bars smaller, longer, thicker, etc. The world is your oyster.
Ingredients In Peanut Butter Chocolate Protein Bars
- medjool dates you can buy medjool dates that are already pitted or pit them yourself . Two brands that I like are Natural Delights and Joolies. You can find Natural Delights in the produce section of most grocery stores and Joolies are offered on and Thrive Market.
- peanuts helps to pack a solid protein punch in these bars.
- egg white protein powder collagen and vegan protein powders work too. My favorite vegan brand is Nuzest which is plant-based and has a minimal, clean ingredient list. You can use my code eatingbirdfood for 15% off your order.
- cocoa powder or cacao powder either option will work.
- sea salt if peanuts are salted, leave this out.
- dark chocolate chunks or chips I like to use Lilys dark chocolate chips to keep this recipe low in sugar and dairy-free.

How To Make These Peanut Butter Protein Bars
Making these bars is truly easier than going to the grocery store to buy some, and I dont say that lightly. There are 3 basic steps:
Pulse togetherthe ingredients in a food processor. Start with the dry ingredients to ensure theyre mixed well. Next, add the liquid ingredients and pulse in just until everything comes together.
Press mixture into a square baking pan. Let this chill in the refrigerator for about an hour to help the bars take shape.
Top with melted chocolate & coconut oil. Chill until set, and then slice into individual bars.

First, add protein powder, peanut butter, maple syrup, almond flour, vanilla extract, and salt to a bowl. Mix together until dough forms.
Second, line a square baking dish with parchment paper. This is an important step! It will prevent the dough from sticking to the bottom of the pan.
Third, add chocolate chips and coconut oil to a bowl. Microwave in 30 second intervals, stirring between, until the chocolate is completely melted. Pour the melted chocolate over the dough. Spread in an even layer across the dish.
Finally, chill the bars in the freezer for 5 minutes or until the chocolate sets. Gently slice 8-12 bars, depending on your preferred size. Enjoy!

Many so-called healthy protein bars on the market, even ones you can find at a health food store, are filled with processed ingredients such as corn syrup solids, maltodextrin, sucralose, sugar alcohols, GMO soy isolate, and so much added sugar and oil that its hard to believe they could possibly pass for a health food.
With this recipe, you get an entire pan of homemade protein bars for not much more than you wouldve paid for just one bar at Whole Foods.

What Makes A Good Protein Powder
Protein powder is a fantastic addition to many recipes, but you want to make sure its not causing more harm than good.

- Contains simple, clean, minimal ingredients.
- Doesnt have added refined sugar. Clean sweeteners include monk fruit extract and stevia leaf extract.

It should also be worth the trouble of eating! Protein powders that include all nine essential amino acids are whey and egg protein powder. Im also a big fan of pea protein powder, which you can read more about here.

How To Make Chocolate Peanut Butter Protein Bars
These chocolate peanut butter protein bars couldnt be easier to make. Theres no baking or stove-top required. All you need is a bowl, a 9×5 loaf pan and a little bit of patience while the bars firm up in the freezer or fridge. Heres how to make these homemade protein bars.
Measure and mix. Mix together the peanut butter, protein powder, chia seeds, honey, and vanilla extract. Add 4 tablespoons of coconut flour. Mix and check the consistency. It should be thick and pliable like play-dough. The thicker the dough, the more firm they will be at room temperature. If its still sticky, add more coconut flour 1 teaspoon at a time to reach desired consistency.
Press and chill. Line a loaf pan with parchment paper. Place the dough into the lined pan and flatten to ½ inch thickness. Flatten the top by placing a second loaf pan on top and pressing down or using the bottom of a measuring cup. Place in the fridge or freezer for 5-10 minutes.
Drizzle with chocolate. While the bars chill, melt the chocolate and coconut oil in the microwave. Drizzle the bars with chocolate then place back in the fridge or freezer for 15-20 minutes before slicing.

Two protein bar recipes in a row? Yes!
Mr. Hungry said I had to share with you this tweak on my chocolate protein fudge recipe I shared last week. He has been working out twice a day, playing basketball in the AM and lifting in the PM He was starting to have INTENSE afternoon cravings that led to him eating a bunch of junk every afternoon. I figured he wasnt getting enough protein, so I suggested he try to increase his intake.
He then proceeded to send me a TON of protein bars to purchase online that were filled with a bunch of crap. Fake sugars, excess real sugar, chemicals, and preservatives, to name a few. So, I set out to make him a bar that he would like , was healthy, and easy to make.
I doubled the amount of protein and used only bananas instead of bananas and sweet potato. I was a little worried he would think they were too banana tasting, but he LOVES them. Ive been making them every week now for a couple of months, and Im happy to say that his afternoon cookie cart purchases are GONE!
Oh, and his body fat percentage dropped 2% in the last two months so he is finally seeing some payout for his two-a-days.
